Foobar2000 has a nice feature to allow you to use many convertors through a gui. It may need a command line converter if it's not one of the built-in formats. It supports flac and wavpack out of the box. Do check it out.

For a "Universal" music converter/ripper, you should give dbpoweramp (http://www.dbpoweramp.com/) a try.

I learnt of this prog through bro Ryner. It's pretty much idiot proof to use, and you can download from its site various codecs like FLAC, OGG, APE and others to rip / convert your CD's. Recommended.
