So after I was asked to make the tenderloin, somebody else suggested I make my ribs. I have been freezing my ass off all day trying to keep thos #$%@&^% Weber at 225.
The problem with having an open mind is that people keep trying to put things in it.

Figuring on 4-5 hours? What brand of lump? Some are better than others, but I prefer Weber’s briquttes.

Once you have a good smoke on them or you have wrapped you could just finish in a slow oven and not freeze.

Yes, but then I lose the right to bitch and have a glass of whiskey to warm me up.

Or...get some smoke in them, take them off the pit and wrap in foil with apple juice or wine, perhaps a bit of honey, make sure your foil is airtight and tender them up in the oven at a bit higher temp....

Plus, this should guarantee you'll be out of dish duty after the meal. That's worth a bit, in my books.
