How people order their steak

Old article but I found it interesting. How people reported they order their steak doesn’t match with the actual data from restaurants.

I always order my steak rare and was surprised to see that’s by far the least common.

A proper medium rare works for me, but that is because restaurants have gotten better at it. Used to be you would have to specify rare to get medium rare and even then it was a crapshoot.

But then I never order steak in a restaurant. Prime rib maybe, but not steak.

Methodology is lacking. All the data come from Longhorn, yet there is no attempt to correct for any restaurant-specific bias (e.g., diners of that restaurant may not be representative of the general population, that restaurant chain may tend to prepare steak rather than the diners’ typical expectations so the diners compensate when ordering). I expect more rigorous work from Nate Silver’s site.

I read yesterday that as much as people promote medium rare for Prime Rib, that it's actually better if it's cooked closer to medium. The fat breaks down more and flavors the meat.

Hmm. I would disagree with that. I dont thing another 5-10 degrees would render significantly more fat and I much prefer the flavor and texture of medium rare. A matter of individual taste I suppose.

One thing I figured out a long time ago about steaks - by the time you buy a quality steak, then factor in all the other little things that cost you money in the course of cooking it, it doesn't cost that much more to just go to a restaurant and let them cook for you.

Baloney. I've yet to find a restaurant steak as good as mine, including Ruth's Chris, Morton's, and Bobby Flay, and I can get prime quality steaks for under $12.

Yep. I made dinner for everyone Saturday on their grill. Salmon with yardbird rub and a little mayo to keep it moist, grilled asparagus and portabellas, Sicilian orange salad. Delicious and healthy.

Yep, I don't like spending money on something I could easily make at home for a fraction of the cost. If I'm going to spend major restaurant dollars, I want something new, something I haven't tasted before, something I don't know how to cook. Wow me. Not chicken breasts and steaks.

See, there it is. I raise cattle, so i can get all the beef I want for nothing. But then you have to cook it.

I can smoke the best pork bbq you'll ever taste -but you could give me the finest cut of beef on the planet to cook and ten minutes later I'll hand you back a piece of shoe leather. I can't cook steak. My wife can't cook steak. And I do not enjoy trying.

Yeah, that’s the real problem. I HATE cooking. I will spend $50 on something I can cook for $5 any day.

Y’all don’t wanna know what I spend on takeout in a week.
