Tonight's dinner - chicken

HONEY MUSTARD CHICKEN

2 tablespoons cornstarch
14-1/2 ounces chicken broth
1 tablespoon honey
1 tablespoon Dijon mustard
4 skinless boneless chicken breast halves
1 large carrot -- cut into 2" matchstick-thin strips
1 medium red onion -- sliced
4 cups hot cooked rice -- cooked without salt

In bowl mix cornstarch, broth, honey, and mustard until smooth. Set aside.

In medium nonstick skillet over medium-high heat, cook chicken 10 minutes or
until browned. Set chicken aside.

Stir cornstarch mixture and add to skillet. Cook until mixture boils and
thickens, stirring constantly. Return chicken to pan. Add carrot and onion.
Reduce heat to low. Cover and cook 5 minutes or until chicken is no longer
pink. Serve with rice. Yield: 4 servings.

Don't waste your time. The sauce never thickened (even after adding more cornstarch - doubled the amount and mixed with the liquid from the pan). The chicken has nothing other than a "chicken" flavor.

I ended up having chicken for supper tonight. But it was just a Shake and Bake meal.

We had chicken tonight too. Grilled with mashed potato and peas.
The Confederate soldier was peculiar in that he was ever ready to fight, but never ready to submit to the routine duty and discipline of the camp or the march.
