Great recipe. Thanks for posting it, Mik.

I accidentally bought a box of something called Super Spinach, which turned out to be a mix of baby spinach, baby bok choy, and baby kale. It worked very well in the recipe. And I used more olives and added some cubes of fresh mozzarella.
