I never really liked gnocchi, thinking it was just kind of a doughy, boring pasta-like potato thing. Then last summer I tasted some in NC that were angelic little puffy clouds of melt-in-your-mouth goodness. Been reading up on them, and how to recreate that texture.

Potatoes are in the oven. We will see how this turns out.

It was easier than the recipe implied. You just have to pay attention. They are cut, and when the Berkshire pork chops are off the grill and resting I will cook them.

Eureka. Not perfect yet, but an outstanding first effort.
