Cajun trinity, garlic, some ground pork, a can of tomatoes, a can of paste, a T of fennel seeds, a little sugar, some beef stock, some red wine, some capers and the juice from the jar for some acid, crushed red peppers.

Also the secret for meat balls is locatelli cheese and bread crumbs. 2 pounds meat, 2 eggs, bread crumbs, grated locatelli cheese about a cup, salt pepper and parsley. That's it. Killer, can't believe I revealed it.

I love pork.

I played with a pork tenderloin and fennel seeds the other night...and then spotted fresh, warm, blackberries in the back yard. Didn't quite work as well as I'd hoped, but I'll revisit the idea. Pork chops with a bit of fat, a splash of red wine...I'm convinced that pork/fennel/blackberries are an item.
