I've done this for the last 4-5 times I've made steaks. I can't imagine a more fool-proof, easy, and delicious way to make steak. Oven at 225 - put Mrs. George's steak in, after appropriate seasonings (just S&P for her) Wait 20 minutes. Put my steak in, with indwelling thermometer to alarm at 125 degrees. Canola oil, butter, garlic and a sprig of rosemary in a skillet at medium-high heat. Sear steaks on each side, spooning the butter/oil/garlic over them. Wonderful, fool-proof and not at all stressful (I GOTTA MAKE ALL THE SIDES NOW!!!) |

Mrs. George just complained that her steak was "too juicy." Where, oh where, have I failed. Next time, I'll put hers in about 35-40 minutes before my own Using this method, I've discovered that I can't overcook her steak...so, it's a matter of increasing her cook time before I put mine in - and mine was perfect. |

While I was in Philly, I've made myself a steak every other day or so. The meat you get even in an ordinary supermarket is orders of magnitude better than what you get over here for the same price. A couple of times my only dinner item was a big T-bone steak, with no sides

I think Mrs. George and I would get along well. I may not like my steaks exactly "crunchy", but I'm pretty whiny if my bbq'd chicken doesn't get crispy skin - I'd rather have it cooked to a dry pasty death if that's what it takes to get the crunch factor.
