I picked up a used waffle maker this week - have never owned one before, never made waffles before. Seriously. So, a question - should both sides be equally cooked (i.e. crispy), or is it the nature of the beast to only have one side looking picture perfect. I'm wondering if it's a fault of this one, or just the way it is. The hinges on the back are a bit wibbly, but again, I don't know if that's how it should be. I like my waffles very crispy (dare I say extra knackig), so would like to see both sides the same, if that is a possibility. I must say though, the waffles I made were fab. I didn't have enough buckwheat for the recipe I found, so used half and half buckwheat and quinoa (ground up). Really good, nutty flavour. |

I haven't responded because I know even less about waffles than you. Here's why: "As good as your waffle recipe may be, if you have a crappy waffle maker, you’re going to get crappy waffles. I know this because I had one. One side would get completely burned, while the other side was underdone." Both sides should cook about the same. Use egg whites for waffles, not the entire egg. Older waffle makers are usually better, as they have more mass and heat more evenly. Ok, I've exhausted all my waffle knowledge... |

thanks, you two. Some good tips and recipes there. I did separate the eggs, beat the whites to a soft peak (as per the recipe I had) - sounds like stiff peaks would be better. Will do that next time. Putting the finished waffles in a 350 oven, on the racks, for a few minutes to get more crisp - this I will do. I think my $10 cuisinart (square, makes 4 at a time) is worth playing with a bit, to see if I can get it to cook a bit more evenly. The waffles I made were still really good, so I may see what can be done with the hinges (loose/missing pin, maybe). Think I'll try finding a new one in a store (although am not sure this model is made any more), and inspect the hinges. |

Sounds Italian. I should have known. I know that restaurants and hotels have pretty good waffles and MFR occasionally hauls out our wafflemaker and performs alchemy. |
