I have no idea here. Was thinking maybe about a meat loaf? Anybody ever use anything other than catsup in it? Not a fan of the stuff myself. Guess I could use a BBQ sauce - have both habanero chili and a GREAT mustard based sauce.

Since this is kind of stream of consciousness posting. I am hooked on Hak's BBQ sauces. Great stuff.

I'm putting some swordfish on the grill (first time). With some lemon-basil butter on top.

Grilled asparagus on the side to make it simple. And to keep it outdoors - it's 93 here, I do not want to turn on the oven.
In my defense, I was left unsupervised.

Sounds good.
The problem with having an open mind is that people keep trying to put things in it.

Turned out to be a great dinner. Meat loaf (Lipton Onion Mushroom Soup recipe), roasted whole carrots, green beans with mushrooms and ciabatta bread.

At 5 or 6 bucks, why would you ever do your own?

Some thin round steak, simmered down in a skillet, steamed cabbage and a baked potato. The potato was really good, mostly because it was just dug last week.

Fresh is always better.

I rather enjoyed brining and rotisserieing my own chickens back when I did that. Tasted much better than the supermarket ones too. Probably wasn't any less expensive though.

This was fantastic.

And the topping, which goes on at the end, was simple. Just the following, mixed:

4 tablespoons unsalted butter, softened
1 teaspoon freshly squeezed lemon juice
Zest of 1 lemon
1/2 teaspoon garlic, very finely chopped (about 1/2 clove)
1/4 teaspoon salt
2 tablespoons minced fresh basil
In my defense, I was left unsupervised.

I really like swordfish but seldom buy it because I have never found a recipe I loved. I took the liberty of putting this one in the recipes thread and will try it next week.

Do try it. For two people I cut the lemon-basil recipe in half. Used a full lemon zest and the full basil allotment, though. I guess I just cut the butter in half.

I will do that. Four T is a lot of butter. I'll use my Thai basil too - love that stuff.

My wife makes a sauce that she bastes meatloaf with, and then I put more of it on top on my plate. It's very simple. Ketchup, mustard, and brown sugar. I don't know the ratios, but it looks like she uses ketchup and mustard in equal amounts, maybe a little heavy on the mustard, and then almost double that in brown sugar.

That sounds fantastic - would work on so many types of fish. Simple and fresh; I'll be trying that asap.

Thanks, Jon. That looks great. Everything's better with basil, right? Well, almost everything.

Love a simple recipe that really delivers, and this looks like a winner.
