HOLY CARP!!!
I'm probably making salmon again because it's always so delicious.

But the interesting thing will be
Balsamic and parmesan roasted brussels sprouts.

I have this really good balsamic vinegar but I don't want to use a whole half cup of it for this one vegetable side. Maybe I'll go half and half between the good stuff and the watery supermarket stuff.

Cut the recipe in half and use the good stuff. You don't need two pounds of Brussels sprouts for two people anyway.

Sounds great.

At Chez Mik, the evening repast will be grilled Branzino (highfalutin name for sea bass) with lemon and pesto, roasted red potatoes and very garlicky green beans. Iced tea since tomorrow is a travel day .

I had the remains of yesterday's hot-dog and burgers. Half of my daughter's friends who were supposed to eat with us saw what I was grilling and realized they had a sudden and urgent appointment during dinner time. Of course, they came back for the sleepover :lol:

What kind is your good stuff? I had a lovely bottle of Comagnia del Montale that someone gave to us. Finished it last week.

I go check on Amazon and it's $62. I'm thinking there must be an intermediate option between this and the supermarket stuff...

Ended up buying a $37 bottle of Villa Monodori off Amazon.

Great balsamic is just that - great. I have to admit I don't buy the high end stuff. I don't use a lot of it in cooking, and when I really need it I use a glaze.

I use it pretty often. One of my go-to veggie recipes (sautéed balsamic mushrooms) uses a goodly amount.

I've never had $60 a bottle balsamic vinegar. I get the $16 a bottle from Costco (at the warehouse).

Turns out they have a bunch of different balsamic vinegars online. I have no idea if their prices are competitive.
