For dinner, we had. . . nothing. Ate some chips and nuts. Oh, had some peanut butter cups, and a couple of cookies.

Brenda, you are the best!!!

Looking at your post, I understand bread, pizza dough (never tried, or tried years ago), shaky on what pitas are (rolled up soft tacos, or the hollowed out bread?), hummus no idea (the fake chicken in sweet-n-sour chinese soup?), tzatziki never heard of it, homemade pizza yum! (tried the take home bake in your oven, good!), baked salmon (yes, I've nuked it and bar-b-que'd it).
Curries (nope), naan (huh??).

But ya know? I'll bet I'm probably the most common male, not on any data list, being culinary challenged. You guys are all so much above the typical me-type -- a fast food junkie by necessity.

I'm a deplorable. . .I know. :sad:

But ---- I KNOW THE DRIVE-THRU HOURS BY HEART -- WEEK DAYS AND WEEKENDS!!! :woot:

Hummus and tzatziki are Greek foods that have gone mainstream. They are great with pita bread and pita chips. Yes, chips! I know how to appeal to the heart of a fast food fan. :)

Pita bread is a common thing in Greek and Middle Eastern cuisines. Its origin is the Middle East, but it's very common in the US now. The best pitas are homemade, and it only takes a couple hours to make a huge pile of them, meaning they can be made ahead and stored in the freezer. They are delicious with a variety of meals and snacks, from lamb shawarma to hummus dip. Hummus is the healthy garbanzo bean dip that us carnivores love. You throw all the ingredients in a blender, and in just a few minutes you can snack for days in a healthy manner. It's great with the pitas or with raw veggies. I love it for a quick lunch.

To make the chips, slice or tear the pitas into pieces the size you want, put them on a baking sheet, and bake them a second time for ten to 15 minutes. They get toasty, crispy, and perfect for dipping. I let mine stay a bit tender inside for the contrast of crispy outside and tender interior. There is no such thing as leftover pitas at our house. :lol:

Tzatziki is Greek, but almost every culture has something similar. It's another dip made from plain yogurt (Greek yogurt is great for this), garlic, tahini (sesame seed puree), olive oil, vinegar, grated cucumbers, and your choice of seasoning. We use dill, mint, salt, pepper, and just a bit of sugar to balance the tartness of the yogurt and vinegar. It's great with meats and pitas.

For those folks here who love shawarma, and want a fast version for a week night, here's the trick : brown some ground lamb (add some ground beef if you want ), season the meat with the Streetcart Shawarma seasoning mix from The Spice House (order it online), and serve it with the warmed pitas, lots of veg (onion, fresh tomato, spinach leaves, raw cucumber slices), tzatziki, and a mixture of canned tomato chunks with harissa (a spicy seasoning you can find at many grocers, including Trader Joe's), olive oil, and tomato paste. I love the tomato-harissa mixture on the pita, with the meat and veg piled on top. You can eat it folded like a taco, or try putting it inside the pocket of a pita cut in half. I eat it with fork and knife as an open face sandwich. Have tzatziki on the side to cool down the heat of the harissa. Bliss!
