Baked Honey Sriracha Lime Salmon

Prep time

Sweet and spicy, baked honey sriracha lime salmon in foil is tender and flaky and has the most incredible flavors. A healthy and easy 30 minute meal for salmon lovers. | lecremedelacrumb.com

Serves: 4-6
Ingredients

1 large salmon or 4-6 individual (4-6 ounce) fillets
salt and pepper, to taste (for me this was about 1 teaspoon salt, ¼ teaspoon pepper)
2 tablespoons butter
⅓ cup honey
⅓ cup sriracha sauce
2 limes (one juiced, one for slicing)
2 tablespoons soy sauce (I used low sodium)
1 teaspoon minced garlic
1 tablespoon freshly chopped cilantro

Instructions

Preheat oven to 400 degrees. Line a baking sheet with foil, grease lightly, and lay salmon on top. Season salmon with salt and pepper to taste. Slice one lime thinly, and slice the slices under the edges of the salmon.

In a medium sauce pan over medium-high heat, melt butter. Stir in honey, sriracha sauce, juice of one lime (about 1 tablespoon), soy sauce, and garlic. Bring to a boil, then reduce to medium heat and cook for 3-4 minutes longer.

Pour ⅔ of the sauce over the salmon (reserve remaining sauce for later) and use a spoon or spatula to make sure the sauce covers all of the salmon (you just don't want any "dry" spots). Fold the edges of the foil up around the salmon so the sauce doesn't spill out everywhere (the foil doesn't need to completely cover the salmon).

Bake for 15 minutes, then switch to broil and cook another 4-5 minutes until the very edges of the salmon begin to char slightly - watch carefully so the whole salmon doesn't burn.
Top salmon with reserved sauce and chopped cilantro and serve.

Notes
I prefer to use skinned salmon, but if you want to use skin-on, just be sure to place skin-side-down on the foil and then gently remove the salmon flesh from the skin when you serve.

Salmon will almost invariably come out good. It's such a user friendly fish.

Yeah salmon is just magic. Still have trouble finding a better meal let alone a better salmon preparation method than wrapped in foil with olive oil butter salt pepper and rosemary. Baked till done.

Well, it is quite edible even when it's overdone, which it often is. But it's so much better when it's not overdone.
In my defense, I was left unsupervised.

Yes, it is. I was buying Verlasso salmon, which is a high quality Chilean farmed version. Now my fishmonger is getting this Danish stuff which is even better.

I've once seen a recipe in which the salmon (wrapped in foil) is cooked by putting it into a dishwasher for an hour, together with your dishes. Supposedly it's not bad.

It was pretty good. Nice spicy kick. Needs more citrus. I'd make it again.

And wonderful raw as sashimi.

Or as gravlax.

sounds so good. If you cut the honey back (I'd be tempted), would the citrus come through more?

I will try this - be great for the previously frozen sockeye I can get readily. I don't muck with fresh off the boat wild salmon, when I can get it; but the frozen stuff needs a bit of a kick, and this recipe sounds great, so simple.

Gravadlax. Mmmmm.
I buy more than 6 packets every week. Usually eat with an avacado roughly mashed with lime juice

Have had lots of smoked salmon, never had gravlax. Sounds delicious.

How does the flavor compare to cold smoked salmon?

Add "throw brunch party" to the list of things jon-nyc's done that I will never do. Along with all the midget transvestite stuff.

I wouldn't bet against the midget transvestite stuff just yet - you're young still.

What Bach said. It's sort of analogous to ceviche, though very different flavor.
