Night before last we at at a place called Rafferty's, I ordered a ribeye steak (medium rare!) that had been marinated in pineapple juice and soy sauce. I honestly can't remember when I had ever had a steak so perfect.
That's the marinade they use at El Pollo Loco for both the steak and the chicken.

It's really good!

No doubt true. The original purpose of the citrus is to break down a tough cut. The flavor is an added bonus. Start with a better cut and you don't need to marinate as long.

OTOH I've tried various copycat marinades and have yet to find a perfect match.

Pineapple has an enzyme that breaks down protein (which is why it's not recommended for gelatin), so I can imagine it would tenderize a steak. That and the huge amount of salt in soy sauce would certainly do wonders for a cheap cut, but I wouldn't do that to a quality cut of meat.

Then perhaps the marinade had nothing to do with it, because the quality of the steak was excellent, and it was prepared with absolute perfection.

Soy has a "umame" quality that makes beef tastes beefier. I've recently been messing with this and it seems to be true.

I mixed a tablespoon of anchovy paste with a pound of ground beef and the flavor was unbelievable! Soy is said to have similar properties.

It was a very high quality cut of meat, and would have been tender, juicy, and full of flavor regardless of the marinade.

The pineapple soy marinade is a well known method to enhance the flavor of beef. The pineapple adds flavor and tenderness, the soy is a umame flavor that enhances the flavor of the meat. Use this it on a cheap cut and it gets better. Use it on a great cut and it sings!

It also works on chicken. Try it at home!
