Hey, it's October, right? Time for Pot Roast!![]() Servings: 4-6 Ingredients: 1 chuck roast (mine was 3 pounds) Olive oil 1 pound carrots, peeled and cut into large chunks 2 pounds potatoes, peeled and cut into large chunks 1 onion, peeled and cut into large chunks 2 stalks celery, cut into large chunks (optional) 1 cup beef broth 1 tablespoon corn starch SEASONING MIX - 2 tablespoons steak seasoning (mine is store-bought and has a blend of peppercorns, garlic, paprika, parsley and salt) 1 tablespoon kosher salt 1 tablespoon dried thyme 1 tablespoon dried rosemary Directions: Combine together seasoning mix in a small bowl. Set aside. Coat both sides of meat with olive oil. Sprinkle on a third of the seasoning mix onto each side.Sear both sides of the meat in a large skillet over medium-high heat. Transfer roast to slow cooker. Place the vegetables in a large bowl. Drizzle on a little olive oil to coat vegetables. Sprinkle on the remaining seasoning mix. Add the vegetables to the same skillet that was used to sear the meat. Sauté for about five minutes - stirring occasionally. Transfer the vegetables to the top of the roast in the slow cooker. Pour in the beef broth. Cover with lid. Cook on low for 9 hours or on high for 6 hours. Using a turkey baster, retrieve most of the cooking juices from the slow cooker. Transfer juices to a small sauce pan and bring to a simmer over medium heat on the stovetop. Whisk together the cornstarch with a little water. Blend into the pan juices while whisking. Bring back to a simmer until thickened. Taste and adjust seasoning as needed. Transfer the roast and vegetables to a large platter. Ladle the gravy over. Serve immediately Here's what it looks like now:

I've never been satisfied with the way the veggies looked when I cook them in with the meat. The carrots always end up brown looking, so do the potatoes. So I cook them separately and then add them in at the end for a little while. I must say however... neither of us can make the meat look as good as it does in that picture.... Tonight at our house: First night in a long time that we can build a fire in the fireplace and just sit and watch the fire. So... Not sure what we'll be eating yet, but I do know that I have a nice bottle of wine chilling, several cheeses and an assortment of crackers for later..... |

I have a benefit tonight with food trucks. We will se what is there, but today I scored a half dozen filet mignons mismarked at $7 a pound. Tomorrow night will be great. |

And how. It's (not surprisingly) quite "herby" in the house right now. But, outside the temperature is 63 and it's raining. This should be quite nice. I'll have to pick a good whiskey to accompany it. Reynolds slow-cooker liner bags. Make cleanup a snap. |

That looks good. I've had a long day at work and M&M'S is coming down with something, so it's a rotisserie chicken and pre-owned sides of risotto and broccoli au grautin. |

Looking at the ingredients of the Thomas sauce, the first ingredient is....drum roll.....KETCHUP. Ugh. It smells like a virgin Bloody Mary. I think it's going to be not-great. |

I wondered about that. For some reason, both thyme and rosemary just don't appeal to me in their dried form. Fresh, oh yeah baby, but I think they become different creatures when dried. Still, that looks damn good, and I see a good ol' beef stew in my near future. It's chilly and raining here as well. |
