Making Paella tonight; Any tips?

HOLY CARP!!!
Recipe:

1 1/2 to 2 lbs live lobster
12 shrimp
12 small clams
12 mussels
1 lb cod cut into pieces
3 chorizos cut up
2 lbs frying chickens cut into cooking pieces
2 teaspoons salt
pepper
1/2 olive oil
artichoke harts
string beans
lemon wedges
1 lb. boneless pork of ham
1 large onion chopped
4 cloves of garlic chopped
1 red sweet pepper cut into thin slices
I green pepper cut into thin slices
3 large tomatoes peeled and finely chopped
3 cups raw rice
1/4 teaspoon of saffron
5 cups boiling water
1 cup of Amontillado (spring for it!)
1 lb fresh peas


Cook it up on floor ov oven and serve.

I think Tom is following my suggestion of not scrimping on anything - that sounds so good. Love the artichoke, and chorizo is a must, imo. Hadn't thought of adding Amontillado, but I sure would do that. One should always have a bottle of that standing by.

Reminds of a favourite recipe I got from here....lb? something like that. A super easy slow cooker canned pumpkin, black beans, tomato....and a bit of sherry. Amontillado works brilliantly with it; doesn't take much, but so crucial.

So far so good. It is almost done, except for the socarrat (burnt stuff on the bottom of the pan). The shrimp and chorizo are not in yet. Have a nice Rioja with it.

Pretty good for a first effort. Socarrat was not what I wanted but the flavor was right. I used Arborio rice. next time I will get Bomba or Valencia.
