Started the smoker up at 3:30, put the brisket on at 4:09. 14 lb full packer, grill running right about 260, mesquite and apple chunks.

That's a lot of meat for the 2 of you.
The problem with having an open mind is that people keep trying to put things in it.

Around 12 hours, give or take. We will be shredding some and freeing it for quick BBQ sandwich dinners.

Looking pretty good at 9 hours. Will likely go the whole 12 before I put it in the cooler.

Pulled it at 10 hours. Temperature and tenderness were right. Let it cool for half an hour, wrapped in parchment paper and into the cooler to rest.

To be served with cole slaw, outrageous corn bread and pumpkin pie. (I got the pie because MFR and The Princess love it this time of year, even though at 84F it doesn't feel much like Autumn.

There's plenty. And here they are! Tender, smoky, flaorful and a great smoke ring. Not bad for my second brisket.

So, a stupid question: Can you do this without an outdoor grill?

Like...in a condo?

I would think, yes.

But, how would you breathe?

(Friday night, wife went to bed, I'm drinking wine, leave me alone...)

I would not recommend it. Nordic Ware makes a stovetop smoker I have been eyeballing. You could not do a long cook in it like ribs, brisket or butt, but you might get a nice smoke flavor into cheese, fush, chicken, even a steak or chop. I would recommend excellent ventilation.

They also have smoke guns that chefs are using. Don't know much about them, but you would still need some kind of container like the Nordic Ware.

If you get desperate, try this place. The original location is near Irving and Pulaski.

They were on Triple D and Check, Please and got good reviews. Haven't been there but folks I know have and said they liked it a lot.

I'd get one of those for the fush alone.

Nothing like a good smoked fush.

Mik, that looks like it still has plenty juicy. Brisket almost always turns out dry. Nice job.
