They had some beautiful whole and filleted stuff at Whole Foods today. What do you do with it? Does it grill well? What I like to do with skin on fish is just grill it skin side down - I do not flip it. |

For years I would saute them (skinless) in a skillet. I would put some butter, rosemary, thyme, red pepper (careful here, not too much), celery seed, Chef Paul's blackened redfish magic and lemon juice in the skillet along with white wine and roast that mixture for a minute or so. I never measured the spice amounts. But probably 1/4 teaspoon of each. I would then add the fillets (good side down) to the skillet and cook until the liquid mixture was almost reduced to nothing. If the fillets were thick, I might add a little more wine to the skillet during cooking to increase the cooking time. When it looks like the fish is cooked about half way thru, flip it. I would only flip the fillet one time. Finish cooking until meat is white and flakey and the liquid mixture is almost gone. This year I tried something new that I found on my fishing forum years ago but never tried before. 4 (6-ounce) striped bass fillets (3/4 inch thick) Cooking spray 2 tablespoons light mayonnaise 1 teaspoon white wine Worcestershire sauce 1/2 teaspoon Old Bay seasoning 1/2 teaspoon lemon juice A sandwich baggie full of crushed Utz Old Bay Crab chips - if they dont sell them in your area, use regular chips and double the Old Bay seasoning Preheat oven to 450 degrees. Place fish in an 8-inch square baking dish (good side up) coated with cooking spray. Combine mayonnaise and remaining 3 ingredients, stirring well. Add in the crushed chips to the mixture and thoroughly mix. Brush mayonnaise/chip mixture evenly over fish. Bake, on middle rack, uncovered, at 450 degrees for 8 minutes or until fish flakes easily when tested with a fork. Then, to get a little crunch to the top mixture, set the oven to broil and broil for 3 minutes... no more than that or it might start to burn. This recipe works well if you don't want to skin the fillets. Simply place the fillets in the dish, skin side down. This has become my favorite way to cook rockfish and everyone I've cooked it for, loves it. Obviously, now that I've told you this, I'll be over soon to kill you.

Mmmm. I did a half hour marinade in myer lemon, olive oil, garlic, pepper and thyme, then griiled them, mopping frequently with melted garlic herb butter. Took longer to cook on a hot grill than I would have thought, but they were a little smoky and delicious. |
