Better hurry up and get over here for dinner. It's German night at our house! Bayerisches Rind (Bavarian Beef) mit Spätzle (homemade egg noodles), Rot Kohl und Apfel (red cabbage with apple), Beten (beets), und Spinat Salat (spinach salad). The house smells so good! This is daughter's last week home before she heads out for Budapest. We're having her requested menus for these last few weeks, and this week she asked for her favorite German supper. We'll be thinking of you!

Beef Bavarian 6 servings 2 lbs. lean ground beef 3 eggs lightly beaten 1 T grated lemon peel 1 t salt half a sweet onion, diced (more if desired) 1/2 cup skim milk 1/2 cup dried bread crumbs 1 T vegetable oil 6 T flour 3 cups beef broth 4 T lemon juice 4 T brown sugar (more to taste) 1/2 t ground ginger 8 whole cloves In large bowl, combine beef, eggs, lemon peel, salt, onion, milk, and bread crumbs until well blended. Shape into small patties, about 18, about 1 inch thick. Heat oil in skillet over medium heat. Saute patties until browned on both sides, then remove from pan. Add flour to pan drippings, with a small of additional oil if needed, and stir flour into the pan drippings to brown lightly. Stir broth into flour mixture with a whisk. Simmer uncovered until mixture thickens, stirring constantly. Stir in lemon juice, brown sugar, ginger and cloves. Return patties to skillet. Cover with a tight-fitting lid and simmer over low heat for at least 30 minutes. Remove cloves before serving. Serve hot, spooning sauce over patties. My added suggestions: Use salt-free broth and add some beef demi-glace to sauce. Serve with Spatzle and a green vegetable as a side dish, such as fresh green beans. Beets are very good with this meal, too. This is a kid-friendly recipe! W e started making this when our daughter was very young, and it's still a family favorite during the cold months. I don't make it very often, so it's a treat. This recipe is an adaptation from a German cookbook I own. I also use the noodle recipe from the same book. PFT |

Your recipe sounds good, a cosy quick version of the classic. I like the idea of the tablespoon of lemon rind (for a pickle replacement) in the patties. I'm going to try this soon, sounds like a good addition to the 'what the heck do I do with ground beef tonight' file

Wait a second, you are talking about ground beef! I misunderstood completely. I thought you were talking about a "Rinderbraten". This is more like what we call "Frikadelle" or, in Bavaria, "Fleischpflanzerl". |

Sue, that's a big reason I found this recipe. I was looking for new ways to use ground beef. My girl does not care for sloppy joes or many of the other easy ways to use ground beef, and when we buy a half a side of beef, or a whole side of beef, one must be able to use ground beef! And you are right about the cozy factor. This is comfort food in every way. |

You'll see. Okay, I give. Your gastrocnemii are your calf muscles; they are typically well developed in people who walk a lot, and the Roman legions walked everywhere.
