Traditional Monday food. Got a nice, big pot simmering on the stove, with smoked sausage, the trinity, some garlic and a couple of basil leaves. I'll let the sausage do its thing, and I'll check for final seasoning before I put my rice on. I'll have to throw some cornbread together and pick some fresh cucumbers and tomatoes for the side. Maybe I can talk the wife into making a fresh blackberry cobbler. Life is good...

And speaking of red beans & rice...these guys are famous for their meat pies, but I think their red beans & rice are as good as anybody's...It's just a tad different, as they like to serve the sausage on top as a split link. http://lasyones.com/ While we're dishing out opinions, another one: You simply can't cook decent beans of any kind in a slow cooker, or at least I can't. Good beans make their own "gravy", whether it be red beans and sausage, white limas with a hambone or pinto beans with tasso. I can't get that thick gravy in a slow cooker...only in a pot on the stove... |

I don't believe I've ever cooked kidney beans from the dry state; have always used canned. Could that be why I don't like them all that much?

I don't use chicken broth and I don't use thyme, but I'm sure that would work. You also don't need to puree beans to get thicker gravy...Just take your spoon and mash a few up against the sides of the pot as they get soft, stir back in and let cook a bit more. You want your beans done with no hard or even semi crunchy ones, but not positively mushy. |

Can't see why you'd use chicken broth when you are doing a long slow cook with all those other ingredients. But the recipe sounds damn good. |

It is, but a good bit depends on how good your smoked sausage is - you need a decent sausage with some smoke and a bit of spice in it, for best results. Edited by Jolly, Jul 20 2015, 03:33 PM.

Jolly, I've got some smoked ham that I could use. It's smoked, but not cured, so it doesn't have the heavy dose of salt in it. We get it done that way at the butcher when we order a half or whole hog from the farm. It's also grass fed, so it's rather lean. I think this could be pretty healthy if made with a relatively lean meat like that. |

Smoked ham will do just fine, although I'm still partial to sausage in red beans. I prefer ham in the small white limas...and if you're ever around Hessmer, in Avoyelles Parish, don't be surprised to see small flattened meatballs along with ham or sausage in your lima beans. They spice the hamburger up and throw it in there for lagniappe. Of course, they've been known to put a dollop of potato salad in their gumbo, too...

I like my bean gravy, but not quite that far...and I think it more of a New Orleans thing to present the beans around a central scoop of rice. We always served ours ladled over the top of the spread-out rice. But that's the nice thing about cooking...so many ways to do one simple thing... |
