I'll pass that on to my wife in case there are any things she might like to know. She's been roasting a lot of vegetable lately, particularly after we joined a Community Supported Agriculture (CSA) last year that brought additional quantities of vegetables, especially root vegetables over the winter, to our house. The roasted beets are perhaps the most delicous. Roasting makes them very sweet.

Good article. I roast vegetables all the time. They turn out great, especially root veggies. These rainbow carrots they are selling now are a good pick. Delicious and they look great.
