Well, if you don't want it bottled, you can keep the barrel at your house how ever long you wish.
I don't know about American whisky, but for Scotch the aging process is supposed to be really critical, and where it is aged affects the flavor.

There's also a legal requirement that any Scotch must be aged for a minimum of 3 years or you can't even call it Scotch. Typically, anything that isn't going to be used with mixers is going to be aged for at least 10 years.
