I've always been a fan of a Bohemian type of sausage called "Cream Sausage." It's a small-diameter sausage, about the size of a breakfast link. It has a unique flavor that is mild, yet with an unusual tang. This, more or less, is what it looks like:

Making it has always been a pain in the arse, because we've always fried it in a skillet in oil. It splatters all over, sticks to the pan, etc.

So tonight I tried something different.

I baked it.

Lined a baking pan with non-stick aluminum foil, put some olive oil in the pan, and baked it in a 400 degree oven for 20 min. After 20 min, I flipped it to brown the other side.

I added some oven browned potatoes (heavy on the garlic and pepper) and it all came out just wonderful. That's some Dijon mustard you see.

Cleanup was ridiculously easy. Throw the foil out, and rinse the baking pan.

I *finally* found some oven-browned potatoes that were easy to make and tasted right. I made them in the oven with the sausage:

3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Preheat the oven to 400 degrees F.

Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.

(I mixed the spuds with the other ingredients in a Ziplock bag)

Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

Comfort food.

Later this week, I'm going to try some steaks in the oven. Bake them, at 275, until they reach the temp you want, and then sear them.

I grid cooking one from frozen in the oven. Waste of beef, but that was a much higher temperature. If I could find a method to make a rib steak like a slow roasted prime rib.....
