Klaus, tell me what you know about the Spekulatius molds. I've been looking at some on eBay, and they really vary in size, design, age, and quality. Some of the antique ones are very special and lovely, which means the prices go very high, too high to justify for cookies. Of course, some people get them to use as a wall display item, because they are so unique, and can be quite beautiful. My questions to you are: What would you say are the more traditional designs used for these molds? What size molds are most traditional? Do you have any useful advice as I go looking for one of these? |

Brenda, I'm not sure whether I can help a lot with this. I've never made Spekulatius myself; they are ubiquitous in the supermarkets. I believe the traditional designs are supposed to illustrate the life of Nikolaus von Myra. The size is rather uniform; I don't know the exact length, but they are around 5x8 cm. |

Oh, Klaus, there are huge molds available! That's why I asked if there is a traditional size for these cookies. Some molds look large enough for one cookie to fill an entire baking sheet. I suppose one just breaks off a piece at a time to share it. Or you could just have a reeeeeeally large cup of coffee with it. ![]() There was a lovely one on eBay from Lott, Deutschland, of a large Santa or Saint Nickolas. It was rather old, though I don't know that it was as old as the seller claimed. It was rather large and had nice detail, but not so much as to make it hard to unmold the dough for baking. I will keep looking, and if I find one to get, I will post again. |
