George, this new kitchen toy should be quite useful. We love Greek food, all of it homemade, and I like to make homemade pitas to go with it. Daughter came home specifically requesting Greek food. When we all feel better, that will be top of the list for menu items. You would be amazed how fast it is to make pitas, and they are so much better than from the store. Had daughter's local friends here for a Greek lunch about a year ago, and they could not get enough of the pitas. I made plenty, enough to have extras for our family that night, but they went through a huge stack. Leftover pitas can be cut into wedges, toasted in the oven, and used as pita chips with hummus. Very delish! We also prefer homemade tortillas for burritos and fajitas. These are all actually very easy things to make, and the press will now make it even easier! Naan takes a different shaping process that has to be done by hand. (We love naan, too.) Most pizza dough does, too. The one type of pizza dough that could work with this is the cracker crisp variety. That's very difficult to make at home because the dough is low hydration (dry and stiff), thus making it very difficult to press to the thinness needed for pizza. Restaurants use a sheeter or dough roller to make cracker crisp pizza crusts. I've looked at getting a used one on craigslist or eBay, and they are usually over $1,000 for a small table top size model. That's hard to justify for home. So could the tortilla press work for cracker crisp pizza crust? Challenge accepted! Granted, they would be small pizzas, very small. But we all like the edge, so that means ... more edge! The edge is the "pizza bone" for those of you interested in technical terms. |

OK, here's my initial plan. I'll need to make the dough slightly wetter than the super low hydration version, because I don't want to break the hinges on the tortilla press. That should let the press do its magic to create a really thin crust, but it will still be too wet to get the cracker texture. To get the moisture down, I can prebake the crust before topping it. It should only take a couple minutes on the pizza stone in a hot oven (500 to 550F). I think these would make about a single serving per crust, but hubby might need two.
