Making this tonight, smashed potatoes and all! Instead of just thighs, I am using an entire chicken that I cut into pieces. She was a free-ranger, so she ought to be perfect for a pioneer woman recipe.

It already smells wonderful. Hubby is salivating.

To get the cup and a half of whiskey, I emptied the dregs from four bottles and used a final half cup from the Glenlivet that hubby does not like to drink. The recycling bin looks like we had a huge party! :lol2:

Peach-Whiskey Barbecue Chicken

Prep Time = 10 minutes
Cooking Time = 2 Hours
Servings = 6

12 whole Chicken Thighs, Bone-in, Skin-on
2 Tablespoons Olive Oil
2 Tablespoons Butter
1 whole Yellow Onion, Diced
1-½ cup Whiskey
12 ounces, fluid Barbecue Sauce
1 jar Peach Preserves
½ cups Water
2 Tablespoons Worcestershire Sauce
4 cloves Garlic, Peeled
3 whole Green Onions, Sliced Thin

Preheat oven to 300 degrees.
Heat oil and butter in a heavy pot over medium-high heat. Place chicken thighs, four at a time, in the pot, skin side down. Brown both sides, then remove to a plate and repeat until all chicken is browned.
Pour off half the grease, then return pan to stove. Add onions to pan and stir, cooking for 2 minutes. Pour whiskey into the pot, being very careful if you’re using an open flame. Stir and scrape the bottom of the pan, allowing whiskey to reduce for a minute or two. Pour in barbecue sauce, peach preserves, water, and Worcestershire sauce. Throw in garlic cloves. Stir until combined, then return chicken to the pot, skin side up. Cover and put pot in oven.
Cook for 1 1/2 hours, then remove from oven.
Serve pieces of chicken over a big pile of smashed potatoes. Sprinkle sliced green onions over the top.

This was really tasty. Always a risk when trying a new recipe, especially when it uses an entire chicken. The chickens we get are not cheap.

Anyway, it was a delicious meal, and that's good for hubby. I have to be gone tomorrow, and he will have this for dinner again.

Yeah, I know. Even if I get the Bell and Evans air chilled at Whole Foods they are not cheap. But I think chicken dishes, especially bone in, have a Bette chance of success than most.

Brenda, I'm just amazed at your abilities. But I have noted the great dinners others are capable of making, wow!

We had "home-made soup" tonight. We often have home-made soup. It's great, and really is home-made!

This was a very easy recipe, especially if you start with the chicken already cut.

Hot damn! Jacques Pepin's Crispy Chicken Thighs and a nice Spanish red. Comfort food a la Mik.

I have posted this before, but it is such an easy, versatile recipe with such a great result. You can add all sorts of things. Tonight I added truffles. Yum.
