Vince, do you find it makes the meat more salty than other seasoning methods? I've always figured it would, but perhaps it doesn't. I'd really like to try this, and the only concern I have is the impact on hubby's low sodium needs.

Brenda, I really don't brine very often. Mostly Turkey. I think it makes Roasts and steaks too tender.
I like to chew meat. I guess that's wht I prefer a NY strip to a fillet.

Well, you're not going to want to add salt to something after brining it, that's for sure. But the salt doesn't keep seeping in indefinitely. At most the meat attains some equilibrium with how salty the brine is, and you can control that.
As a good person, I implore you to do as I, a good person, do. Be good. Do NOT be bad. If you see bad, end bad. End it in yourself, and end it in others. By any means necessary, the good must conquer the bad. Good people know this. Do you know this? Are you good?

Yep. It does not absorb all the salt, just becomes very tender and tasty. I'd rather do it myself than buy that nasty pre-brined stuff at the store. At our grocery now they charge MORE for the stuff that has NOT been brined!!!!! Robbery!

So I now buy most of my meat at Fresh Market or at Whole Foods.
