How is it that the best part of a chicken is the only part that's not overrated and over-loved? Your wings are famous because of hot wings. Entire restaurants are built on them. Your chicken breasts are the basis of 1000 different recipes that need some bland protein substrate to carry some breading or sauce. Your drumsticks are famed finger food for kids. Only the lowly thigh hasn't found a hallowed spot in our culinary lore. But it's the most flavorful and juicy part of the chicken.

An 8 piece bucket of fried chicken is clearly the only valid scientific laboratory in which one can conduct this comparative experiment.

Seriously, though...thighs and legs are my favorite part ofd chicken and turkey. Goose, duck, pheasant and quail are all meatier of breast and wing.

I always have Boneless, skinless thighs in my freezer. Have them at least once a week.
Rarly do breasts (re: this thread only). One of my faves is the said thighs with mushrooms,
peppers, onions, garlic, and cut up fresh tomatoes. and lots of Rice.

Nah, it just reinforced it. I always use thighs for brining and cooking in my rotisserie. It's really some of the most delicious stuff I've ever tasted, with a good brine.

Nah, it just reinforced it. I always use thighs for brining and cooking in my rotisserie. It's really some of the most delicious stuff I've ever tasted, with a good brine.
Horace, you do a lot of brining. I need you to teach me about this. I don't recall ever brining meat before. Marinating, yes, but not brining.

The state of my art hasn't progressed too much since I posted this in the recipe thread:

I made a quite delicious brine this weekend. El Pollo Loco uses a "citrus marinade" so I wanted to try citrus.

14 cups (1 gallon - 2 cups) water
1.5 cups kosher salt
2 cups orange juice
Several tablespoons lemon juice and lime juice
1 cup brown sugar
1 sliced onion
lots of pepper
several cloves of crushed garlic
couple tablespoons of crushed rosemary

I think that's about all I put in there. Bring it to a boil and then let it simmer for an hour or so to get all the flavors into the liquid (covered, so you don't lose too much to evaporation). Then let it cool off and proceed to brining stuff. I used chicken thighs, and brined them for about 12 hours. They're delicious!


I really love the citrus (orange, lemon, lime) and wouldn't part with it. I prefer brown sugar to sugar. Some sugar is important, whatever you use. (Honey or syrup are also good and distinct.) It's hard to go wrong with the herbs and spices. Oregano is good. The fresher the better. Your aleppo pepper is very good too.

Oh, but come to think of it, I like pineapple juice more than orange juice in brines.

Horace and Vince, well I need to try this! I thought it would make the meat too salty to be compatible with hubby's need for low sodium meals. Perhaps it's not so much that it is more sodium, just a different technique.

Not uncommon, but also not very common.

Many people are hesitant to eat innards. I've never quite understood why. That said, I'm a little hesitant to eat brain (usually offered in Bavaria, where veal brain is somewhat popular).
