Pork Roast with Mango Chutney

What do you recommend for side dishes? I've not made mango chutney before, and I'm probably going to use Alton Brown's recipe (I'll scale it down):

Ingredients
4 pounds fresh mangos, ripe but not too soft, peeled
3 tablespoons vegetable oil
1 teaspoon chile flakes
2 1/2 cups medium dice red onion
1/4 cup minced fresh ginger
1 cup small dice red bell pepper
8 ounces unsweetened pineapple juice
4 ounces cider vinegar
1/2 cup brown sugar
1 1/2 tablespoons curry powder
Kosher salt and fresh ground white pepper
1/2 cup raisins or golden raisins
1/2 cup toasted, roughly chopped macadamia nuts

As for sides, I'd go with something green and light. Sauteed spinach? Baby bok choy?

Quinoa with pine nuts or slivered marcona almonds. Maybe couscous. I agree with the spinach. (We had a really peppery pork tenderloin last night with broccoli and spinachmicrowaved with a little garlic and bacon - yum)

Maybe potato wedges roasted with the pork, but your family has a lot of carbs, so maybe not.

My Moroccan Chicken with Lemons and Olives is simmering now. Janet is out with friends.

Yes, that's why I made only a fourth of that recipe. I suppose it would be alright to freeze or can it.

It was a big hit here, very yummy. I made some freekeh and brown rice, and I served green beans as a side dish. Great meal! Hubby and daughter will take some for their lunches, too.

The chutney recipe calls for golden raisins, and I don't have any, so I used dried cranberries in it. I think I liked that better than I would the raisins. Also did not have the macadamias, so I subbed sliced almonds, which were also good.
