Sweet potato casserole.
Chicken and dressing.
Broccoli cheese casserole.
Sugar peas.
Carrot coins in butter.
Yeast rolls.

Sweet potato pie.
Orange cake.
Persimmon cake.

I might have missed a couple of dishes ... and we haven't get to desert yet.

Jose's family had the usual zillion-course pig-out buffet, but I only picked a little of 4 things.
No more than any usual meal.

I don't understand why people eat to the point that they complain they ate too much.

The family patriarch's home brewed herbal tea ... hopefully it can help with digestion. :)

My uncle went crazy yet again. It was good and all but the best of course was the leftover sammich I made this morning.

I didn't even sit down to eat it. I stood right there, fridge door open, and scarfed the thing down while staring at the Orange Juice label.

I really liked the roasted butternut squash cornbread dressing I made.
I like the sound of that, do you have a recipe for it, or could you give me a quick description? I'm looking for a new stuffing/dressing idea for our Christmas turkey, and I looooove roasted butternut squash.

I'd love to try that butternut squash dressing.

We had 4-5 of your traditional comfort casseroles, two salads, devilled eggs, fresh rolls, turkey, homemade cranberry sauce, and sweet potatoes.

Dessert consisted of apple pie and pumpkin pie made from scratch by M&M'S. When I say from scratch, I mean from scratch. This was the first time she hadn't used a store bought crust or used canned pumpkin for the filling. It took several slices of each to accurately determine that they were indeed better than any bakery bought pie that I had ever tried. Of course, I still have to test them again today to ensure tht they hold up well over time, too.
The problem with having an open mind is that people keep trying to put things in it.

Yes, one cannot be absolutely sure, when testing only one or two pieces.

It's the recipe from my local Trader Joe's -- they come up with their own recipes. This uses store products, but they're substitutable.
I usually do it all from scratch (drying my own bread, etc.), could with this too. It sure was fast to put together, and oh my goodness it was tasty.

Roasted Butternut Squash Dressing
1 box TJ's Corn Bread Stuffing Mix (12.4 oz)
1 package (12 oz) TJs Cut Butternut Squash
1 carton (32 oz) TJ's Chicken Broth
3/4 cup, divided, TJ's Gourmet Fried Onion Pieces

My notes: Cut the larger pieces of butternut squash into smaller 1 inch cubes. Place on a baking pan, toss with olive oil, roast at 400F for 30 minutes or until tender and slightly browned.

Dressing:
Preheat the oven to 350 degrees. Follow the stuffing mix box instructions except substitute chicken broth for water.
To the prepared stuffing mix, add the roasted butternut squash and 1/2 cup of fried onion pieces. Spoon the mix into a casserole dish. Cover and bake for 30 minutes.
Remove from the oven and uncover. Sprinkle the remaining 1/4 cup of fried onion pieces on top and return uncovered to the oven for 5 to 10 minutes.

I also sautéed some celery and added it in. I loved the roasted squash in it.

I had lasagna bolognese on thanksgiving day. But I did manage to find a turkey and bacon sandwich for lunch.
In my defense, I was left unsupervised.

Thanksgiving Day Menu:

Brined Turkey on the barbecue smoked with hickory chips.
Oyster, Cornbread and Sausage stuffing
Garlic Mashed Potatoes with Gravy
Colorado Style Pork Green Chile
Lime Jello Salad
Green Salad
Green Bean Supreme Casserole
Candied Sweet Potatoes
Rolls
Variety of pickles, olives, cranberry sauce.

The stuffing and sweet potato recipes were first timers. Sweet Potatoes were fine but nothing out of the ordinary, I just don't normally do them but they did turn out good and the stuffing recipe is a definite keeper.

Also a new recipe for desert - Marbled Pumpkin Cheesecake; with a crumbled gingersnap crust and seasoned with Chinese 5 spice instead of the traditional pumpkin pie spice. Definitely was a hit with all the boys :)
