Tonight's Dinner: Roast Chicken

Ingredients:

3 large baking potatoes;
3 sweet potatoes
two large onions
one fryer hen
assorted spices

Preheat an oven to 350. Start with a nice fryer hen, about 3 lbs. Clean and then mist with olive oil. Also rub with one tablespoon butter, which doesn't add many calories, but does add a lot of flavor. Sprinkle with salt, pepper, paprika (lots), garlic, and a bit of sage. Place in a large, covered roasting pan.

Now chop the onions into quarters, and add to the roasting pan. Slice the potatoes (both kinds) into inch-thick sections and add to the pan as well. (Some peeled baby carrots are nice, too). Next, in a measuring cup add two ounces each of worcestershire, teriyaki, soy, and whatever wine you have around. Pour over the chicken and vegetables, then cover the pan.

Put in the oven for about two hours and go do whatever you want -- you're done cooking. Two hours later, serve the chicken, which will be wonderfully tender and succulent, on a platter. Remove the vegetables and serve separately in a large serving bowl. Total prep time is about 15 minutes, there's not much to clean up, and as a nice side effect, the house smells wonderful when your family gets home.

No idea. This is my first time with this recipe.

Sure looks good, though.

Drooling. I really wanted roast chicken tonight, but got overruled.

We're being fed at a friend's house. We used the truck to helped her get her sailboat out of the water for the winter. Grilled flat iron steak on arugula and wild mushroom risotto. The steak recipe is out of People Magazine. Been wanting to try it since I really like flat iron steak. The risotto is a Giada De Laurentis recipe.

The James Beard Award-nominated chef of Nostrana in Portland, Ore., shares a dish that's perfect for a barbecue

NOSTRANA TAGLIATA

Makes 4-6 servings

1 cup mesquite wood chips

˝ cup extra-virgin olive oil

10 cloves garlic, thinly sliced

2 sprigs fresh rosemary

2 lbs. flat iron steak

Salt

Freshly ground black pepper 6 cups arugula, trimmed, washed, dried and chilled

1. Soak wood chips in water for 30 minutes; drain. Preheat grill to medium high. Sprinkle wood chips over grill's heat source; cover with grill lid.

2. Heat olive oil and garlic in small saucepan over low heat, 5 to 6 minutes or until garlic begins to color. Remove from heat; add rosemary.

3. Season steak with salt and pepper. Grill meat, covered, 3-4 minutes per side until medium rare. Remove steak to cutting board; cover and let rest 5 minutes.

4. Diagonally slice steak 1/3-in. thick; arrange over arugula. Drizzle with warm olive oil. Serve immediately.

Sounds great!

The version we make includes stuffing the cavity with lemons - rind and all - another onion, sage and rosemary.

Makes it taste like you boiled it in butter. :thumb:

Try this with your rotisserie sometime soon

1 whole chicken (about 4 pounds)
4 tablespoons white vinegar
3 tablespoons white wine
3 tablespoons canola oil
2 1/2 tablespoons garlic powder
2 tablespoons paprika
1 1/2 tablespoons cumin
2 teaspoons black pepper
1 teaspoon salt
juice of 1 lemon
1 quart cold water

Preparation:
Combine vinegar, wine, oil with garlic powder, cumin, paprika, black pepper, and salt. Mix well to form a paste. Add lemon juice to cold water. Trim chicken of any excess or loose fat. Wash chicken thoroughly with lemon water. Place chicken in zip-top bag. Pour spice paste over chicken. Coat chicken completely with mixture rubbing into every surface. Try to get the paste under the skin as much as possible.

Seal bag and place chicken in refrigerator for at least 2 hours. The chicken will have more flavor the longer it "marinates" in the spice mixture. Do not refrigerate more than 24 hours however.

Pop the sucker on your rotisserie, wait a couple hours, and enjoy.

Sure does! He likes to pick at the bones - but I have to be careful so that they don't fall on the floor and Oliver gets them.

We don't eat eggs too often, so there's not a lot of shells around for him.

I never cover a pan when roasting a chicken. In fact, I usually use a roasting bag. It really helps keep with the clean up, and I think it makes for more even heating of the bird.

Came out pretty damn good. The teriyaki, Worchestershire, and Soy sauce added a lot of flavor (as did the onion). Chicken was really tender, and the potatoes were cut-with-a-fork soft and tasty. I uncovered it for the last half hour to brown a bit.

Next time, roasting bag.

that does look great Jolly. We have chicken often.. i don't like the smell of it cooking unless it is very very fresh. in fact, i am going to take back this chicken to the store ( i bought 3 and stuck them in the freezer immediately).. they had feathers on them and smelt, well older - .... it's very effective when taking stuff back if you say you do NOT want a refund and just suggest they the item have for THEIR employee lunch and pretend to throw up a little in the back of your throat during the discussion.. ick.

Gonna take another pass at that roast chicken tonight. I have this enormous bag of fresh rosemary and another of chives to stuff it with. I wonder if you can make rosemary pesto.

Can be refrigerated for up to one week.

In the hair splitting mode. George forgive me for this.
When seasoning the bird pour the wine on after the oil and the butter.
If you season before the wine it washes most of the seasonings off into the veggies. It wont wash away the oil or butter.
