I collect cookbooks and my faves are those published by the Junior Leagues of different communities. They are the best recipes of the richest ladies who entertain.

This one is from Louisiana somewhere - somewhere near the Ouchita River. Lots of great country cooking

... marinate 18 doves - smoke for 8 hours
...Scotch pate
...cocktail weiners with apple jelly and mustard
...fluffy tom thumb pancakes
,..party pimiento cheese spread - the original - I'm actually going to make this.
...tomato aspic
...cucumber mousse (i'll pass)
...party potatoes stuffed with crabmeat
...devilled alligator tail
...Grant's Grenouilles - 5 points to anyone who know what Grenoilles are
...moose leg roast (do they have moose in Louisiana?

if cooking for men, make more.

we used go take flash lights and big bags.. stun the frogs with the light, walking slowly up to them with the light in their eyes, then grab them and then throw them in the bag.

They'd wait there till the next day.. probably terrified.

We again grabbed them by the body. dip them in water then put their body against a tree and chop off the legs, dip them in flour, salt and pepper. the legs would jump in the pan when they started frying. they were actually delish. We had big frogs in our neck of the woods. We also ate crawfish by the barrel and little black catfish from the friends' farm... those were yucky.

i wonder whether my mom or my dad came up with those. - they were both farm raised.

Were the frogs ever actually "dispatched", apple - i.e., killed? Other than by having their legs cut off? The French knock them on the heads after stunning them with light.

Now, though, even at their annual frogs legs festivals, the frogs legs are East Asian imports. Frogs are an endangered species - from both fungus diseases but most of all from being "eaten to death". It's illegal to hunt French frogs nowadays.

I used to love catching them as a child - my favorite childhood memories. Even though we just let them go at the end (kind of an anti-climax).

in retrospect it was pretty horrific. the cousin i frog hunted with was pretty darn cute tho. - Fred. It seems cutting off their legs (2 at a time) killed them pretty quickly. .. the poor frogs.

We visited my brother in law - a vietnam veteran in the gulf of Mexico - Right outside of Corpus Christi and close to Galvaston. He had bought an old garbage dump right on the coast, cleaned it up, stuck a house on it. I have never seen so many flies in my life.... not because of the dump, but because that cesspool of water, swamp and vegetation was where they lived - very unpleasant once the sun went down.

my nephews collected alligator skins to make into boots and the real country hick neighbors gladly bootlegged some alligators. it's not that the meat was bad - it was so darn tough tho. If i had had the Country Country cookbook I could have created a good meal.

Sadly my brother in law had turned into a druggie - all by himself and always stoned. At one time he was brilliant.. the city manager of St. Petersberg.. or some big Florida city. He said that killing in the war, was the worst thing he could have ever done with his spirit. .. that it absolutely killed his will to live - he was still absolutely brilliant. He had a heart attack about 18 years ago. I wish we could have brought him home.

Little River, Tensas River and the Ouachita (wa-shi-taw) come together at Jonesville to form Black River. I've gigged more than one frog on the Tensas and I've durn near drowned in Little River near Catahoula Lake, but I've never been on the Ouachita but a few times.

If you follow the Ouachita back up north from Jonesville, you'll find it runs hundreds of miles up through Northeast Louisiana and into Arkansas. The folks along the way aren't cajun, just Deep South. Because of the poverty of a lot of the region and the distances between decent-sized towns, that part of the state is still home to some real characters.

Really, really good people, though. If they like you, they'll give you the shirt off of their back and help you button it on...

in my book there are 5 recipes for spinach casserole made with canned mushrooms.. you'd think mushrooms would have been available in the stores. ... and caviar pie.. lots of caviar.
