Christmas Dinner Suggestions?

So we decided to do just a low key Christmas Day. Just the three of us, and we figured it would be too much of a PITA to do a small ham or turkey just for the three of us and decided to simplify things. The problem is that now we can't decide what to do. M&M's wants steak, salad, and sweet potatoes. Luke wants sphaghetti, and I want to order in a chinese smorgasbord. That made things complicated enough. What made it worse was the realization that not only would we have to take care of dinner, but we also had to take care of lunch. Plus, I realized this also means no leftovers, and no munching throughout the day. So now I'm leaning back towards doing a fairly large meal for the three of us to eat on all day, and have some leftovers. I think M&M's is starting to feel the same way, but also doesn't want to just do the same old turkey or ham. Luke's fine with anything as long as we're getting Eddie's Reese's Pie for dessert.

So any suggestions?

Granary french stick and three cans of soup would be quick and easy. See if you can get away with it and tell me how LOL.

Make a bunch of Cornish Hens. Eat one each for dinner. The rest of the bunch use for picking at. Make a big pot of mashed potatoes. Use them for potato Pattys later for snacking. Get in some(home made or bought) salads (cole slaw)

Pot roast, the kind that roasts in a broth with onions, carrots and potatoes and makes the whole house smell good. Add some salad and fresh bread and you're set.

brisket with a caloric potato casserole sounds good to me... roast some veggies.. you can make sandwiches later..

hams are easy peasy... i like the idea of cooking a big dinner and having leftovers.

hams are easy peasy...
gets my vote. so easy and the leftovers are fabulous.

you can have sweet potatoes with the dinner ham, and chopped up ham (sundried tomatoes, basil, garlic, olive oil, parmesan) with spaghetti the next day. Sandwiches, poached eggs on....so much you can do with a ham.

Stuffed pork loin. Lots of decent recipes on the web, usually very easy to cook. Goes well with either mashed potatoes, baked sweet potatoes or candied sweet potatoes.

Or how about a nice baked hen with dressing? Not as big as a turkey, with less cooking time. Hens are going for less than a buck a pound down here...a nice five pounder would work well.

Add a salad or vegetable of choice with either of the above, and you've got a nice meal.



Or heck, just roast a whole pig, and you'll have plenty of leftovers... :thumb:
