I'm sure everybody knows this already but just in case, a fast way to bring a steak to room temp is to seal it in a plastic bag and immerse the bag in room temp water for 30 minutes or so. Ideally both sides of the steak should be in contact with the bag, so squeeze the air out as much as possible.
That's how I defrost.
:thumb: It's surprising to me how long it takes refrigerated steak to warm up to room temperature if you just leave it out in the open air. It can take hours.

Over the last year, I've cooked steaks in a pan more than on the grill.

First thing I do is coat both sides of the steaks (unfrozen) with Montreal Steak Seasoning. I like more on mine than Plays does. Pat the seasoning into the meat.

Next I melt a quarter stick of butter in the pan on medium high heat. Once the butter is melted, in go the steaks. First side I do for about 4 minutes. Then flip them and cook for another 3 to 4 minutes, depending on how you like them cooked. Both Plays and I like ours medium rare.

I started doing this one night when it was cold and rainy and didn't want to cook outside. Once Plays tried it, she now asks me to cook them this way instead of on the grill. Plus the house smells great during cooking.
Did this tonight. I don't have a cast iron pan so I couldn't follow GK's instructions.

This worked pretty well, considering it was my first time. It was a bit over cooked, but I blame that on inexperience, not the method.



In my defense, I was left unsupervised.

jon, we did our steaks this way tonight too. Simple and they tasted great. I swear it's the butter.

I too sometimes overcook them, depending on the thickness of the cut. Just wing it and you'll get it right most of the time.

Janet and Lauren were both out tonight, so I pan roasted a nice thick veal rib chop - superb with a very nice 2009 Margaux and a pan sauce of shallots, garlic, mushrooms, deglazed with brandy and finished with just a little bit of cream. Side dish of summer squash and zucchini demi-lunes sauteed in olive oil and garlic. Exquisite.

Thanks, but you don't hear much about the oatmeal, shredded wheat, meager salads for lunch. The abysmal leftover penne with tomato sauce and stale iced tea I had Thursday night. They're not much fun to post about. :lol2:

two rib eyes (around here in the civilized world we call that entrecote) half kilo each, will undergo pan cooking using the rule of 2's.

as george certainly remembers, the real rule of 2's pertains to meckel's diverticulum

This is how we cook ours.

Oh, an additional note...apple's bourbon topping is quite good. I've never done it myself, but Mariner's in Nachitoches serves a Rue Bourbon Steak. It's usually my pick when I drop by there.

i had a steak ( a couple yrs. ago) cooked on a grill skillet.. I watched anxiously as Harry SLOWLY cooked the steaks. I didn't say anything but was surprised when they turned out with perfect marks, a perfect medium / medium rare. not too smokey flavored but hay. He took about 15 or 20 minutes to cook them.. I was going nuts, but what do i know?

I agree with Apple. I have a George Forman. I think it just fails to get hot enough. Very good for Salmon tho.
