Hot soup on a cold day

If you want trouble, find yourself a redhead
It's the first kind of cold day here, 32 F, a little windy, overcast. So I made a big pot of ham and bean soup from this recipe.

3/4 lb fully cooked ham
1 medium onion
2 garlic cloves
2 tablespoons butter
2 (16 ounce) cans great northern beans
3 cups chicken broth
2 cups water
1 cup potato
3/4 cup carrot
3/4 cup celery
1/4 teaspoon pepper
1/2 cup frozen peas
2 tablespoons fresh parsley
Directions:

1 In a 3 quart saucepan, saute ham, onion and garlic in butter until onion is tender.

2 Add the next seven ingredients; cover and simmer for 30 minutes or until vegetables are tender.

3 Add peas and cook for 5 minutes. Add parsley and serve.

yum... yum yum... it don't know about the peas tho. I like to eat them alone because even tho they are nutritional powerhouses, i really don't love them.

now i am using a package of guajillo dried peppers... probably for a burrito type recipe.. called carnitas something or other.

they are REALLY good, very mild and VERY flavorful - so pick some up. They make a good salsa with just salt and tomato paste.

yum, I love soups like that. Great use for leftover ham. I usually make a green split pea soup with my leftovers, but will try that for a change.

I've made a note of those peppers, apple. Sounds like a good thing to have in the cupboard.

I made french onion soup the other day for our dinner. So good.

Mik, respectfully, your above is great.
My Mother (and I) made it exactly as your's, but no Ham.
Instead make Italian style meatballs, plenty of garlic.
When their done put them with your above.
AND serve with a big scoop of Ditalli Pasta.

Oh and no peas.

Oh, I skipped the peas. I have some, but could not see where they would add much to the soup. I prefer them alone with a little butter. Besides, bean soup is not supposed to be green.

The meatballs sound great, as long as they are REAL meatballs - beef, pork and veal with the right seasonings, and not just little round hamburgers. You could use a lot of things for the meat. Italian sausage would be good too. I might throw some leftover cabbage in to make it a real Flatulence Fest.

Mmmmmmm, pie!
After Thanksgiving I knocked together a soup using all the scraps we had left. I had no idea whether it would be any good, but it turned out great. I boiled the turkey carcass to make broth and loosen any good meat left on it, picked the meat off, the turkey came packed with a brown gravy starter, so I tossed that in, added a can of sliced carrots, some diced celery, a can of peas, lots of pepper and some salt.

The gravy starter stuff made it. It was goooood.
