It's different every time, Jon. Even I don't know how I do it. I just use the pan drippings, a little stock or demiglace and a roux. I don't use plain flour when a roux works so muh better. Maybe a little wine and seasoning.

Looks good, jon.

Does anybody else think the nutritional info looks out of line? For 500 calories per serving, I want scalloped potatoes.

My wife had several gift certificate to Honey-Baked-Ham. So we will be having overpriced frozen green been casserole, scalloped potatoes, stuffing, and what looks like thick-cut deli turkey.

Unfortunately, this year we are in the middle of moving which necessitates an easy meal.

I'm going to try to squeeze in some time to make asado (a family tradition for Thanksgiving and Christmas dinner). I have the dried chile and pork chops handy, so hopefully everything will work out.

Buns. Lots of buns. My mom asked me to bring the bread for Thanksgiving. She specifically said no 'spicy' bread, because stepdad does not like it, which means no herbs or onion or anything, just plain. Hubby wanted some onion/herb rolls. I'll make those later for here at our own home. For mom and stepdad, I made some very plain buns. I made seven dozen, enough for folks to take some home if they want.

What Bordeaux did you buy, R2? Your inlaws must have a taste for the good life.

Incidentally, I found a $6 Bordeaux the other day that was very nice - drinkable, perfect structure for the region. Not quite as deep as more expensive examples, but a serious bargain nonetheless. I'll have to find teh name. I'd buy a case or two except that I previously found a really nice $5 Montepulciano di Abruzzo.

Chateau L'Abbaye de Saint-Ferme 2006 Les Vignes du Soir Bordeaux Superieur.

I think it is just declassified juice from a better producer. Somtimes in the off years like 06 they'll sell off their juice rather than bottle it under their own name. Can be some killer bargains.

On my moms side Mexican/Native American/German. Dad's side is much more complicated.

I'll see if I can find the recipe (I am fairly certain it's in a box somewhere).

Mik -- au contraire, it is I that has a taste for les Bordeaux

I bought 3 different varieties. I go into our, ahem, state stores armed with an app and I see what is for sale (fabriquer dans une chateaux, si possible), I check for a moderate price, then I check he app to make sure it's not awful.

By having 3 different varieties, I have an excuse to keep tasting.
