so I am on my 2nd big loaf and it has risen twice. It's been a 2 day (now 3) process. I was going to bake it last nite, but fell asleep. I formed it into a loaf and will bake it later if it does indeed rise again.. Maybe it will taste more sour. My first loaves were awesome but artisanal tasting rather than sour. The crust was fabulous.

here's hoping.

HOLY CARP!!!
My first batch of loaves were awesome.

The second and third batches were about as dense as a loaf of lead.

Wondering what happened to the starter to stop making the dough rise like the first batch.

i've read a lot on the interwebs of how to feed and care for starter.. so much info, so little time. it is so iffy. My loaf is rising like gamebusters and will be ready for baking soon.

It's worth it. I love yeast breads too. One person suggested adding just a bit of yeast to your starter to feed it.

Sourdough is a yeast. However, it is a wild yeast that exists naturally in the air rather than a cultivated yeast existing on your grocer's shelves.
