I had started buying it a few years ago when I was trying to cut out my pre-dinner bottle of beer. I think it might have been a post from Joe (Realplayer) at WTF that turned me on to it. I was buying this brand at something like $3.80/ 16 oz bottle.![]() Since it's expensive, I tried to drink just 1/2 bottle per day. I got really hooked - especially on the ginger flavored. But, then the FDA discovered that some batches had more than the .05% permissible alcohol allowed in a non-alcoholic beverage and they took it off the shelves. I bought up about 10 bottles, and when they were gone I was very, very sad. There was no definitive news on when it would be back on the shelves. That's when I decided to start making my own. A woman at the local health food store had a "mushroom" to donate. It's really a yeast formation that looks something like this: ![]() I started making my own and have really gotten it down pat. I add ginger, and mastered the tastiest, sparklingest kombucha that completely rival the expensive bottled stuff. Word has it that the probiotic qualities make it a health elixir. I can't say I've derived any big health benefit from it - who knows - but I really love the stuff. |

It's definitely an acquired taste. The smell itself is enough to turn a person off. It reminds me of the smell from a bag of used beer and soda bottles that have been sitting around a little too long before being taken to the redemption center. |
