Assembling the pasties tomorrow (Friday)

four pounds ground beef, very lean
half pound ground pork
one very large rutabaga
8 or 9 potatoes
10 - 12 carrots
3 large onions
2 cups beef broth
pepper
lots of herbs and spices

The filling is all cooked and in the fridge. Tomorrow I'll make the dough for the pastry crust.

How many pasties will this filling make? Not sure. Maybe 40? I'll find out tomorrow.

I love pasties. But I have yet to manage to make a crust that doesn't kind of fall apart when I wrap them up and cook them. They end up leaking all over the place. Yummy, but messy. Not sure what I'm doing wrong. Too much fat, maybe.

i actually have made them, and you want to kind of knead the dough a bit overmuch to develop the gluten.. i don't have a recipe but it does have less fat and a splash of milk.

Rutabagas are God's best vegetable EVER! I don't put potatoes in mine at all.. just onions, rutabaga, carrots. Minnesota recipes are the best. I wonder where my Minneapolis Junior League cookbook is?

We call them pork pastries .. pasties sound like underpants or something.

You need sort of a hardy pastry dough. I'll try to remember to post my recipe later today. It is not meant to be a tender crust like a fruit pie. It is sturdy enough that you can pick it up and hold it to take a bite of the pasty, if you want to forgo the fork. Yet it is still tasty and not hard or tough to chew, kind of a fine middle ground there for a pastry.

You'd love my pasties, Mik. Mine have a robust flavor, not the bland stuff often offered in the line of pasties. I use plenty of onion, a little garlic, and lots of other spices and herbs.

Daughter adores these. She is excited it's pasties day. :lol2:

Crust: (makes 5-6 pasties)
3 cups flour
1 1/2 sticks (or 3/4 cup) unsalted butter (cold)
1 1/2 teaspoons salt
Enough cold water to make a slightly sticky dough, ~1/4 - 1/2 cups.

My batch today is multiplied by 6.
18 cups AP flour
5 sticks butter unsalted (I'm going lighter on the butter to reduce the fat)
3 Tbls salt
a little over 4 cups of ice water

I have a pastry hook for my Hobart.

The dough is chillin' right now. :)

Had to increase my butter from five to eight, which is only slightly less than the recipe states. Got a nice silky dough. Should be good!

Made 32 pasties and ran out of filling. I have some turkey pot pie filling to use with the remaining dough. Should get 8 or 9 pot pies. Nice to fill up the freezer. These are my convenience foods for future days.

More likely to see tortillas down your way. Make some for your freezer. Very handy for the night before an exam. :)

Real similar to a Nachitoches meat pie. If you're anywhere around Northeast Texas, they know what that is.

I think you're asking about the filling, so that's what I'll address. For me, cooking the filling a day in advance makes it possible to do a large amount for filling the freezer with pasties.

I brown the meat while I chop the veggies. The veggies go into a large roaster, and I put the meat on top with the herbs and spices I want. I pour the broth over all of it and put a tight lid on the roaster. The whole works cooks for about 90 minutes at 350F. The rutabagas take the most time to cook, so that's why I plan for a long cook time.

After I remove the roaster from the oven, I stir the whole works to distribute all the goodies, adding more herbs and spices if it needs it. Sprinkling some flour into the mix soaks up the remaining broth. This helps keep the pasties moist inside when the filling finally gets baked inside the pastry.

Mix the dough and let it chill for 30 to 60 minutes. By using ice water, you can go with the 30 minutes. If only using cool water, plan for 60.

Yes, I roll out circles of dough, anywhere from 6 to 9 inches in diameter. Put the filling on one side, keeping it away from the edges. Fold the empty side of dough over the filling (I use about a cup of filling in each) and roll the edges or crimp with a fork. I like to roll the edges to look like rope. There are videos on youTube about how to do this, too.

To move a filled pasty to a baking sheet, I like to use a cake lifter. Posted Image

On a half-sheet pan, lined with parchment paper, I can usually fit 6 pasties. Put a tray into the freezer, let the pasties get firm, and then you can transfer them to freezer bags for storage.

Yes, John, they are of the same nature. The crust is intended to be sturdy enough to be held in the hand while eating. The one in the picture also shows the rolled edge that I like.
