For cooking a whole chicken along with potatoes, carrots, etc... in a crockpot. How much water, seasoning suggestiones, etc...

Just did it a couple weeks ago for the first time. It was wonderful. Will do it again soon.
Sprinkled S&P and some Paprika on and inside. I put a couple cloves of garlic and a small onion inside chicken. Pre seasoned (S&P,paprica,basil,oregano) Carrots,potatoes, cellery, mushrooms. Instead of water I put about a cup of chicken broth in the pot.
Put the chicken in and the seasoned veggies around and on top. Turned it on at 1:00 on high, lowered to medium at 4:00. Served at 6:30.
As I said above it was very good. And surprisingly crisp on top.
I think tho, the next time I may use less liquid because the bird produced lots of juice it's self. By time it was done the liquid was too deep.

The bird was one third under "water" by time it was done. I think I will use what ever it takes to just cover the bottom of the pot 1/4 ". Should be enough.

Sunday I put six boneless Thighs in the cooker. Garlic, S&P, Basil, Oregano, cut up Onion, Mushrooms,Green peppers, Red pepper flakes. A large can of tomato puree,
and a cup of red wine. Great Cacciatore, over Ziti.

HOLY CARP!!!
I don't think a whole chicken needs any liquid....just throw in some big chunks of onion, celery, carrots in bottom of pot. I've put balls of tin foil under the chicken, just to keep it from swimming in liquid.

When I got home at 6:00, I didn't have time to eat, so I put it from low to keep warm. Just got home and checked, the chickens 3/4 covered in broth. The skins not very crisp (lol), but the meat is literally falling off the bone. Seeing as the carcass basicall disintegrated when I pulled it out, I figure I'll debone the rest tonight, put it back in, add in a litle flour and chicken base and pour over biscuits tomorrow.

BTW, this is the first time I cooked a whole chicken, I cleaned out the cavity really well, but there was nothing I could do about the neckbone. I had thought you were supposed to remove the neckbone, but I couldn't find any way to cut it out.

I'm not going to be driving the family to the hospital tonight, am I?

I'm reconsidering the chicken & biscuits. With the italian seasonings that went into the chicken & the broth, I'm wondering if maybe some tomato paste & some green peppers and turning it into some kind of Italian Chicken Stew.
