Btw, I did not have the pie filling enhancer stuff cited in the recipe posted in the link. I just used a tablespoon of lemon juice, three tablespoons of tapioca flour, and 3 tablespoons of superfine sugar in place of it. Came out terrific.

I am a fresh peach fanatic. I buy an entire lug at a time of them at the grocery store this time of year.

We put them in smoothies, have them with vanilla yogurt, make baked items from them, and eat them plain.

Made smoothies the other morning for the three of us: six fresh peaches, some strawberries, sweetener, and a little yogurt. Bliss. :hearts:

No offense, but my MIL's peach cobbler will stomp that sucker flat, mainly due to her crust.

She makes all her own pie crusts, but when she makes them for a peach cobbler, she finds another gear. Picture a nice, flaky crust on the bottom, fresh (as in pick, peel and cook) peaches and a top crust made from pie crust that's been rolled out, dusted with butter, cinnamon, a few other spices, folded over, rolled out and cut out with a biscuit cutter. And then she sprinkles a little pixie dust on top.

Take one of those steaming hot out of the oven, spoon up a smoking bowl of nirvana and drop two tablespoons of fresh jersey cow cream on top - the kind of cream you cannot buy at the store - and curl your toes, it's so good.

It's a peach pie that'll make you want to slap yo' mama...

I eat them constantly too, but I buy them two at a time from my green grocer. But that way they're perfectly fresh. (it helps that my green grocer is right around the corner, and I walk by there several times a day)
In my defense, I was left unsupervised.
