Today is the perfect day to make a slow-cooker recipe. Got home this morning at about 6, and had all ingredients for Phlebas' Slow Cooked Hungarian Beef Stew. I cut back on the cabbage a bit, and threw in 4 diced potatoes. It's been going for about 5 hours now, and smells heavenly. My question is about the "sauce". I'd like it thicker. I assume I should do it after everything's cooked. What's the best way to do that. Make a roux or add the liquid to some flour and then blend it in? |

The roux would work, George. You can also use cornstarch mixed with some of the liquid, especially if you want to avoid lumpy blobs. Leaving the lid off with the cooker on a high temp for the last 30 to 60 minutes will also allow some of the liquid to evaporate and naturally thicken the broth. |

Aha! The secret is revealed. I did not know there would be the addition of the lovely sour cream. George, you will soon be in heaven. Sour cream will make this a silky smooth broth. |

If you're sure you want it thicker, you can whisk flour with the sour cream before you add it and then let it cook a little while after you add it to thicken. You could also remove some of the broth, whisk in the flour with it, and return it to the cooker to avoid lumps. Big Al |

That's what I was thinking about doing. I'll reserve some for mixing, add the sour cream, and if I need it thicker, I'll add what I reserved with flour. |

It needed no thickening. After it was done, I poured off a little of the sauce to save, and added the sour cream. It thickened up nicely. Good stew, Phlebas! Thanks. |
