SAUTEED SWEET CORN WITH BASIL

This recipe is very simple but it has a sophisticated flavour that is sweet but intense.

- 8 ears corn (about 6 cups/1.5L kernels)

- 3 tbsp (45mL) butter

- 1 small clove garlic, finely chopped

- 1 tsp (5mL) salt, or more to taste

- 1/4 tsp (1mL) pepper

- 2 tbsp (30mL) chopped fresh basil

1. Remove corn from cobs as explained above.

2. Heat butter in a large deep skillet. Add garlic and cook gently about one minute until fragrant. Add corn and cook about 5 minutes until barely cooked but heated thoroughly. Add salt, pepper and basil. Season to taste. Makes 6 to 8 servings

leftover spaghetti. don't really want it, but it's what i have. the sauce is made from fresh tomatoes, onion and garlic, so that's nice.

Geez.....

I opened a little bag of cornbread muffin mix, heated up a can of soup beans, cut a slice of onion up into little bits and stirred them into the soup beans, and learned that the house label tub of margarine that I bought the other day won't melt, and tastes like Crisco....

Tried a new recipe tonight:


Quinoa Risotto with Mushrooms and Thyme


1 cup quinoa, rinsed
1 tablespoon olive oil
1 1/2 cups chopped onion
1 garlic clove, pressed
1 8-ounce package sliced crimini (baby bella) mushrooms
6 ounces fresh shiitake mushrooms, stemmed, sliced
3 teaspoons chopped fresh thyme, divided
1 cup dry white wine
Grated Parmesan cheese
preparation

Bring 2 cups salted water to boil in medium saucepan. Add quinoa, reduce heat to medium-low, cover, and simmer until tender and water is absorbed, about 13 minutes.

Meanwhile, heat oil in large skillet over medium-high heat. Add onion and sauté until onion begins to brown, 5 minutes. Add garlic; stir 30 seconds. Add mushrooms and thyme. Sautée; until mushrooms are tender, 6 minutes. Add wine; stir until wine is reduced and liquid is syrupy, 2 minutes.

Mix quinoa into mushroom mixture; season with salt and pepper. Pass cheese separately.

In my defense, I was left unsupervised.
