Delicious Beef Tongue (Lengua de Vaca) Tacos Prep Time: 15 Minutes Cook Time: 8 Hours 15 Minutes Ready In: 8 Hours 30 Minutes INGREDIENTS: 1 beef tongue 1/2 white onion, sliced 5 cloves garlic, crushed 1 bay leaf salt to taste 3 tablespoons vegetable oil 5 Roma tomatoes 5 serrano peppers (I used a single jalapeno. Hubby can't handle the spice.) salt to taste 1/2 onion, diced 2 (10 ounce) packages corn tortillas (I made ours from scratch.) DIRECTIONS: 1. Place the beef tongue in a slow cooker and cover with water. Add the onion slices, garlic, and bay leaf. Season with salt. Cover and cook on Low overnight or 8 hours. Remove the tongue, remove the skin and shred the meat into strands. 2. Heat the oil in a skillet over medium heat. Cook the tomatoes and peppers in the hot oil until softened on all sides. Remove the tomatoes and peppers in a blender, keeping the oil on the heat; season with salt. Blend briefly until still slightly chunky. Cook the diced onion in the skillet until translucent; stir in the tomato mixture. Cook another 5 to 6 minutes. Build the tacos by placing shredded tongue meat into a tortilla and spooning salsa over the meat. Hubby and I both loved it. Daughter is not a huge fan of Mexican food, but she thought it was good, too. |

we have some awesome Mexican food carts around town (near the butcher shoppe).. who knows what they cook, but the tacos are awesome. |

My mum used to serve us beef tongue in salads. To say it was delicious would be an overstatement. Traditional poor people's food in England is always a bit crap - tripe and onions, jellied eels. Bleugh. I've never actually eaten jellied eels, but if you have to stick them in jelly to stop them wriggling around, I don't want to know. Plus, anybody who's ever swum in the English channel and survived knows it's not exactly the cleanest sea. Rich people's food in England is a little better - my favourite recipe involved getting on the train and going through the Channel Tunnel before eating. |
