... with the new mixer.

I made a batch of whole wheat bread last week, and a batch of oatmeal bread yesterday. What a joy this is compared to the little Kitchen Aid I have. The big mixer worked through four substantial loaves worth of dough yesterday, and it was a rustic dough, nice and grainy with the old-fashioned oats. It just chugs along and never flinches. The little mixer would have groaned with even one loaf of that dough, while this one handled four, and could have handled at least eight. It's so nice to easily take a loaf over to the neighbors.

The dough has room to rise right inside the mixer bowl. I put oil on the top of the dough, flip it, oil the other side, and cover it with a fresh dish towel. In an hour, it's ready to punch down and put in the baking pans. My grandmother should have had one of these.

Late last week, I made a big batch of the Thunder cookies with the big mixer. They turned out great. It was so nice to make a full batch. The little mixer couldn't even handle half of that.

It's so nice that I can fill the mixing bowl with all the ingredients and just let it run. It doesn't try to throw its bowl off the support arms. It doesn't try to shimmy off the counter (it sits on the floor), and it doesn't wiggle at all. It's even quieter than the little mixer.

Rug hooking is another good passion. I share my fun with the family, too. They help me plan my rug designs, and they critique the colors as the rug progresses.

The baking is a big hit with the family, including the extended family. My MIL's fella just loves my breads. My stepdad is loving this, too. When I call and say I'm coming over with bread, he puts his dinner away and just waits for the fresh bread to arrive. :lol2:

Hubby and daughter love to walk through the back door and be greeted by the aroma of fresh bread or cookies. I hope daughter always remembers that.

Cool.

I haven't even used my Kitchen Aid stand mixer yet. I use my food processor for making pie dough and otherwise mix by hand.

I've been craving crisp chocolate chip cookies since last night. I'll have to make some tomorrow! :excited:

I keep tweaking the recipe in my quest to replicate the Thunder cookies from the Third Street Bakery in Duluth, Minnesooooota. I think the next time I'll try fewer eggs and more peanut butter. They are already really good, and they do not go to waste as I experiment. Taking notes is crucial, because I only make them once a month or so.

Between those batches I make other things, and some crispy chocolate chip would be mighty tasty!

I have two recipes for crisp chocolate chip cookies, but I ended up making regular cookies. When they came out of the oven though, I thought, I really should have made the crisp ones! Textures matter for me.

I used Guittard semi-sweet chocolate chips for the first time. I'm a big fan of their dark chocolate but hadn't tried their baking chocolate. It has a slight smoky note to it that I like. I'll probably use Ghiradelli 60% next time though, it's less sweet.

What's in a Thunder cookie?

I'm still fine tuning the recipe, so let me get a revised one posted here again. I need to do that for myself, too.

It's a peanut butter and chocolate chip type cookie with wheat flour, wheat pastry flour, oats, vanilla, brown sugar, and good stuff like that. We usually get some when we are in Duluth, Minnesooooota at the Third Street Bakery. I'm gradually getting closer to their recipe, and mine are already quite good. The hard part is that the dough is rather stiff, and grainy, which made it really tough on my little mixer. The big mixer just whips through that dough like a hot knife through butter. It was yet another reason the Hobart was eagerly awaited by my family. :)

One of my favorite cookies has oats, dried fruit, banana, nuts, etc., in it -- it's like having breakfast, but in a cookie. :wink:

I haven't used my Kitchen Aid yet, I mix cookie dough by hand. I love to whip cream by hand, it's fun and a good work out. I add a splash of brandy or Chambord to the cream too.

Thunder cookie dough would be tough to mix by hand. For me, it would be really difficult, because I have bad shoulders. I love my mixers. I could not do these types of cookies, or any of the breads, without the mixers.

I've seen some breakfast cookie recipes. I should try some for my family, especially for daughter. She might like that for breakfast. It certainly would be good for mornings when hubby needs to rush off to work. He could take some with him.

This reminds me that I should see if I can get something made tomorrow. Daughter has a friend coming over in the afternoon to work on a band duet. Daughter plays French horn (and piano) and the friend plays clarinet. They'd probably like a treat. ;)

Yes, that's the kind of thing I was thinking about. This is one of those recipes you can customize for your family. Daughter would nix the coconut, and I'd swap pecans or almonds for the walnuts.

These give cookies a whole new purpose: breakfast!! :clap:
