I just bought a steel wok. I am seasoning it for the first time. I did all the steps and am now at the step: REPEAT 3 OR 4 TIMES. Which step would you go back to - the first one where you clean it then boil water - or do they mean for you to just repeat the heat with oil step?

Continue with the oil. Same as a cast iron skillet. Most important thing. Never, never, EVER, let the wok see soap. It'll undo all the seasoning. I just made some pork chops in my cast iron skillet tonight (see recipe thread) and I put no oil or anything in it. Easy to clean with a scouring pad (NO SOAP), and dry with a paper towel. The seasoning is important, but, in my experience, nothing seasons it better than repeated usage. Do what the instructions say, and cook away, cook away, and then, cook away. After 20 or so meals, it'll be your favorite utensil. |

George, because of you I never use any other frying pan but my cast iron, I love it, and it is more nonstick that my nonstick skillets. Love at first steak. |

Tonight I made pork chops using a recipe that called for them to be "browned" before cooking. Well, the cast iron went into the oven, hot as hell. Onto the burner at high heat. Seared the chops on both sides for 3 minutes (screw the "browning") and then followed the recipe. Wonderful chops. Well done, and juicy as could be. |
