I'm doing another pre Concert "Brunch" kind of thing on Sunday. It's going to be cold. Salmon, Pasta Salad, our friend Apples Asparagus and Walnuts. I have a couple pounds of cooked and deviened Shrimp. I do not want to have a simple Shrimp Cocktail. Any one know a nice cold shrimp side dish?

ceviche would be good. it's ok that they are already cooked and actually will taste more shrimpy.. ceviche is excellent but the fish flavor is often lost to the acid.

shrimp salad on toasts.. cook shrimp and 'process' or finely chop. add a boiled egg, a bit of mayo, parsley and tomato (maybe a bit of onion)

bake thin slice of an artisan bread for the toasts

shrimp cioppino.. yum (that would be best served hot).

I have a lovely recipe for a curried shrimp salad (in mayo), in papaya halves.....might be a bit too rich for a side dish, though.

here it is, anyways

Papaya with Shrimp and Curry Mayonnaise

1 cup mayonnaise
1/4 tsp. ginger
1/2 to 1 tsp curry powder
1 clove garlic, mashed
1 tsp honey
1 Tbsp lime juice

2 ripe papayas
3/4 lb. fresh shrimp, cooked

Mix first 6 ingredients until smooth. Halve and clean papayas. Fill each cavity with shrimp and top with a dollop of curry mayonnaise mixture.

Makes a fabulous appetizer.

Thank you all for the ideas and the good wishes. I'm going with the Ceviche, I never knew you could use already cooked shrimp. I thought the whole idea was the "Process" cooks them. Went out and got some fresh lemons and limes. I'll start them Saturday morning.
My friend is proforming with her Master Chorale the Verdi Requiem, with members of the Philadelphia Orch. And members of the Academy of Vocal Arts as soloists. So I feed beforhand some of our friends that are attending.

don't soak them too long.. but just dress them. .. otherwise they'll be limey. shrimpy flavor is good.

Good luck! You will, I assume, tell us how it turns out.

We're having grilled salmon tonight, just a little garlic, salt and olive oil on it, plus a salad I got out of Real Simple (they have some GREAT recipes.. very fast weeknight stuff) - oranges, tomatoes, cilantro (I didn't like the tasteless cilantro I had so substituted spinach) and green olives with a litte olive oil on them.

Should be tasty. Lauren will hate it, but Janet's been in Atlanta all week so I wanted to make something good AND healthy. Tough, kid.

They're out getting pedicures for her prom this weekend.
