HOLY CARP!!!
Does anyone have any favorite dishes they make for Easter? Any suggestions? We're having guests so I'm scanning Gourmet, Williams-Sonoma, Bon Appetit, etc., for ideas. We're probably going with lamb.

i make a marvelous sauce by mixing the meat drippins with a jar of mint jelly - a tbls of cognac puts it over the top..

i cook my lamb with lots of thyme, cracked pepper and chopped garlic.. a 1/4 cup of diced onion in the pan.

(the boneless leg of lamb from Sam's or Costco is under $5, and superb)

extra points if you can find fresh mint leaves for garnish and slicing into the sauce

I have other lamb recipes that I want to try, but for probably for some other time than Easter, like the Leg of Lamb 'Black and Tan' and the Lamb Chops with Dried Cherries and Port.

It's supposed to be 81 and sunny on Easter so grilling might be a winner. But then I would need to figure out a vegetable side. Perhaps grilled spring veggies in a herbed marinade.

We'll probably do a roast ham, Jacques Pepin style. I love ham dinners, because the leftovers make such great, fast dinners (chopped ham, garlic, sundried tomatoes, olive oil, spaghetti parmesan....)

I don't usually do desserts, so sorry, no ideas there. The Easter Bunny usually brings me some good chocolates, so what else does one need? :)

Yum! I must try making those someday, perhaps when we get fresh plums here, later in the summer. I recall seeing a recipe where they used frozen puff pastry (or was it phyllo?), which sounds really good to me, as my pastry making gene is defective. :silly:
