HOLY CARP!!!
So it's Lent . . . and I'm trying to think of meatless lunches and dinners for Friday. I cook fish for either lunch or dinner, which leaves one meal to figure out.

I know there are some vegetarian food lovers here -- do you have any tips for your favorite dishes? Thanks! I need to expand my meatless meals repertoire.

Bean burritos. I saute onions, add refried beans and enough water to make a nice consistency. Put a nice dollop of bean mixture in a wrap, add a goodly amounted of shredded cheese (cheddar, jack, whatever suits you), some chopped up cilantro, and maybe salsa (although you can use that as a condiment). Then nuke them until they're heated through. Simple, fast, complete protein and yummy.

Or a variation on that. Drain a can of black beans. Peel and cut a sweet potato into one inch or so chunks. Boil until tender (maybe 10 minutes). Put the beans, sweet potato, and shredded cheese in the wrap. . . .

When I make them, I cut up a bunch of avacados to have on the side.

Another really, well balanced protein-wise meal is Mexican Lasagna, a favorite of my family. I was going to start copying the recipe from memory when I decided to Google. Wonders never cease. I found it. The only difference from my recipe (which came from Vegetarian Times, is that it uses a combo of cheddar and Jack cheeses. I think that would be much better than mozarella.

pasta with shrimp, linguine with clams, cheese pizza, veggie pizza, etc.

There are a few recipes I've been wanting to try:
Farfalle with Asparagus, Roasted Shallots and Blue Cheese
Cheesy Baked Penne with Cauliflower and Crème Fraîche
Torn Pasta With Zucchini And Arugula

I think I'll make the first one for dinner tonight.

Browse the vegetarian cookbook section of your local store and invest in one that looks good to you. Vegetarian cooking is a skill learned over time.

Using some good cookbooks, I have made many good soups and stews from scratch, vegetable sandwiches and wraps, red pepper tarts, potato dishes, and lentil dishes. Some of these may be aquired tastes, but many are mainstream.

Lots of good middle eastern stuff, or dive in the world of curried foods. Tons of vegetarian ideas.

Do you want to eat eggs? There's the much forgotten quiche, which makes a great dinner. I still the use my battered old copy of the hippie cookbook, The Enchanted Broccoli Forest, for a basci quiche formula.
Spinach quiche, with gruyere, green salad on the side....yum.

Vegetarian chili, with black beans, red, green, yellow peppers, tomatoes, lots of cumin and smoky paprika and garlic; really fast, easy and tasty.

This was very good. I added a little cream after the gorgonzola was blended in. Yum, I love roasted shallots.

Grilled portobellos are always a good, meaty addition. I like stirring some up in the pan with red pepper and onion, and putting it over pasta.

A lot of my big meals tend to be some kind of pasta combination, or something starchy mixed into a big salad (pasta, rice and beans, crumbled veggie burger).

Cheese is important.

Anyway, like I was sayin', shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir-fried. There's pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp, shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich. That- that's about it.

A dish is never too summery for AZ. Tomorrow it will be sunny and 84. It rarely gets cold enough that you feel like making chili. I did make it once this winter.
