The Bison should cause a scandal in the US. The enviro types there probably don't realize that Bison is considered domesticated livestock in most Canadian jurisdictions and therefore not subject to the endangered species act.

I've had beefalo. My late, ex FIL raised them for awhile. Pretty tasty. Never had %100 buffalo, though. Does it taste like chicken?

I have eaten Bison on this side of the border.
We have it frequently. Had it in chili last night, burgers the night before and probably spaghetti tonight. In fact, I don't buy regular ground beef anymore.

As far as the ground stuff, Patti, I like it better than beef. It's leaner and tastier. The main reason I buy it though is that the super market stuff claims to be from animals raised without antibiotics and hormones which generally translates to in a much more sustainable fashion than the meat lot fare. I get it at BJ's in a double pack of one pound each where it's not even that much more expensive than ground beef.

Patti, you're from Michigan, right? Did you ever hear of a restaurant in Marysville (or somewhere near there) called Emil's. He raised buffalo right next door to the restaurant, and buffalo burgers was the specialty. When I was a kid, the notion of eating buffalo was rather exotic. After we'd fill up on burgers, we'd go behind the restaurant and try to pet the beasts peering over the fence.


Edit: Wow. I guess they're back in business. And it's in Columbus, not Marysville. Emils' is back

I love bison! There's a great little burger place near here that does bison, ostrich and some other burger which I can't recall right now. It's amazing how much the flavour differs from burger to burger. Delicious!
